This knife fits perfectly in the hand, but the transition between handle and blade should be slightly better felt and visible. (therefore no perfect score for ergonomics).
In terms of cutting, (herbs) chopping, etc., this knife is more than good. Very sharp and easy to steer. As a result, the herbs and vegetables that are processed are not crushed, as is often the case with more blunt and less qualitative knives. This knife can easily compete with its peers in the professional range of ¿200 and more.
I myself was a bit skeptical about this until a friend assured me of the qualities of this knife and I must say I was very pleasantly surprised.
In the kitchen, cutting technique is often underestimated as being important for the end result. This kitchen tool will tell you right off the bat that this assumption is wrong. With this knife you can only blame yourself if the vegetables are crushed or pressed again, instead of cut.
I don't know yet how long the sharpness will remain and how durable the knife is. (Short of possession) Obviously it will not go in the dishwasher and we will have to wait and see.
A warning for people with (small) children: This knife is really extremely sharp. If a toddler finger falls under this, I'm afraid it's not just a cut. So keep it out of reach.
In that context it is a pity that there is no cover or the like. supplied with the knife. Now you run the risk of 'accidentally' grabbing the blade with all the consequences that entails.
Conclusion: an absolute must for those who take both cooking and their wallet seriously.
